Nothing like an acai bowl to make you feel like the ultimate basic you-know-what. But, seriously, no shame here because acai bowls are DELICIOUS. Chock full of antioxidants and vitamins, these bad boys not only delicious, but nutritious as well. I’m typically a breakfast-on-the-go kinda girl, and whipping up these bowls can take a few precious minutes from your morning routine, but they are worth it. The last few weeks I’ve been making the time in the morning, just so I can start my day with a bowl of this yummy goodness.
Also worth mentioning, that this recipe is totally customizable – Not into dairy? Skip the yogurt. Swap almond milk out for coconut or soy milk if that’s your thing. The recipe calls for mixed berries, but I typically throw in whatever combination of fruit I have freezer-burning (word?) in my freezer. Mango is always delicious! Adding the toppings is my favorite part – Matt always tells me that “you don’t eat with your eyes” but I disagree – Presentation is everything, man.
makes 2 medium sized bowls
- 2 frozen acai packets (I usually buy these from Sprout’s or Trader Joe’s, in the frozen fruit section)
- ¼ c. plain greek yogurt
- 1 ½ c. frozen mixed berries
- 1 banana
- 1 c. unsweetened vanilla almond milk
- extras: ground flax seed, chia seeds, protein powder, collagen peptides
- fruit: strawberries, blueberries, sliced bananas
- shredded coconut
- chia seeds
- mini dark chocolate chips
Put all ingredients into blender. Blend on low/high until smooth - Adding more milk as needed to reach the desired consistency. Ideally, your bowl should be slightly thicker than a smoothie. Pour into a bowl, and finish with your favorite toppings. Enjoy!
